Mom's Recipe Book: Garlic Lime Chicken

One more entry into Mom's Recipe Book, and tomorrow we'll be back to our regularly unscheduled programming. (But you can look forward to frequent further forays into the goodness of Mom's cooking!)

From the "Chicken & Fish" section...

Garlic Lime Chicken
Ingredients:
1/3 c soy sauce
1/4 c lime juice
1 T Worcestershire sauce
2 cloves garlic, minced
1/2 tsp. dry mustard
Pepper, to taste
4 to 6 boneless, skinless chicken breast fillets

Instructions:
Mix first five ingredients, and marinate chicken at least 30 minutes. Remove from marinade, and sprinkle with pepper.

Cook on grill or in a skillet coated with cooking spray over medium heat. Turn halfway through, and cook to an internal temperature of 170 degrees.

You had me at "garlic" and cemented it with "lime". Two of my fave flavors are garlic and citrus. Can't wait to try this!

Mmmm....that marinade sounds delish!! I'll definitely give it a try. I'm always looking for new ways to spice up chicken!

Becki--I enjoyed this so much growing up too--when I posted this recipe I realized I really need to make it myself!

EliandMe--Wow, what a man! Of course, I love to cook, so I'm okay with my husband not cooking much...but he'd be pretty perfect if he LOVED doing dishes. Oh, well, it would be intimidating to live with a perfect man, right? :)

I do like your Mom's recipes. So often I see a recipe and think 'I'd like to do that' and then get put off by the fact that the ingredients are either exotic or not in my cupboard. Your Mom's use everday things to such good effect. I'll be trying this one soon.

Just posted an adapted version of this recipe on my blog. It was a REALLY good marinade for tofu / tempeh! :)
